What's better than fresh homemade pancakes in the morning? I've been using this recipe for many years and hope you will it enjoy it too. Unlike most recipes for pancakes this one does NOT use buttermilk.

Mix together:
1 c. sifted all-purpose flour
1/2 tsp. salt
2 T. sugar
2 tsp. baking powder
Add the following combined ingredients and stir just until dry ingredients are wet (do not overmix, batter will not be completely smooth):
1 large egg
3/4 c. milk
2 T. vegetable oil
Once ingredients are combined pour onto griddle for desired size pancakes. I generally go by sight but you can also use a 1/4 or 1/3 cup measure. Pancakes are ready to flip when bubbles appear on surface. Do not flip more than one time, so be sure they are ready when you do.
Makes about 9 5" pancakes. They are sooooo good. We also love to add fresh blueberries or chocolate chips to the batter, delicious!
