Hi Michelle, I love your e-zine. I enjoy the articles and the tips. Here is one of my family's favorites. I have picky kids and they love it. It's also healthy! We like to eat meatless at least 2-3 times per week.

Ingredients:
1 package of whole wheat pasta
1 jar of Spaghetti sauce, your favorite flavor
1 pack of soy chicken patties (Morningstar® Farms or
Boca® brand)
1 c. mozzarella cheese, or 4 slices of provolone
Directions:
Preheat oven to 375 degrees. Cook the pasta. While the pasta is cooking, put the 4 frozen soy chicken patties in a baking dish. Cover with sauce and top with cheese. Bake for about 15-20 minutes. Serve "Chik" patties over the pasta. Great with a salad. Serves 4.
