My sweet mom often made Chicken and Yellow Rice like this when we were living in Tampa. Except she made it in a pressure cooker. It is SO GOOD. And it's still one of my all-time favorite frugal dinners to this day!

Ingredients:
1 whole chicken
Chicken bouillon cube (for extra flavoring)
1 package of seasoned Yellow Rice (large or small, depending on how many servings you need)
Optional: Add cooked green peas (frozen or canned) after mixing rice and chicken together.
Clean chicken and remove giblets. Place cleaned chicken into a large pot of water (with a chicken bouillon cube if desired), and boil until done. Remove skin and bones from the cooked chicken, and tear or cut meat into bite-sized pieces.
Prepare yellow rice as per instructions on the package. Add cut up chicken pieces to the cooked rice, and cooked green peas of desired. Serve warm.
Feeding a crowd? Double the yellow rice to stretch this recipe!
