There are lots of tasty ways to season green beans (including cut up onions, bacon bits or a bouillon cube, just to name a few), but this one is my favorite. My step-mom, born and raised in Alabama, made this dish while visiting with us after the birth of one of our children. I couldn't believe how easy it was, how good it tasted, and why I had never thought of it! ;o)
Cut 1-2 slices of bacon into small pieces. Heat a saucepan over medium-high heat. Add bacon pieces to the pan and cook until almost crispy, while stirring so the pieces won't stick to the pan. The bacon pieces will sizzle and cook very fast!
Add 2 cans of green beans (drained and rinsed), or a pound of fresh or frozen beans, and cover with water. Bring to a boil. Cover and simmer on low heat for 30-60 minutes.
Delicious!
