I created this delicious banana bread recipe years ago when trying to incorporate more whole wheat flour into our diet. It has plenty of sugar but is still healthier than regular banana bread. (You can also make it with honey or Splenda instead of sugar; I would recommend trying half and half.)

Ingredients:
1/2 c. salted butter or margarine
1/2 c. light brown sugar
1/2 c. granulated sugar, or less
3 large bananas, broken into pieces
2 eggs
1 tsp. baking soda
1 c. oatmeal (or 1/2 c. oats and 1/2 c. flour)
1 c. whole wheat flour
1 c. chopped pecans
1-2 T. wheat germ
Directions:
In a large mixing bowl cream butter and sugars until well blended. Beat eggs slightly and add to creamed mixture. Add broken pieces of banana and blend into batter until chopped up well. Stir in soda, oats and flour. Add nuts and wheat germ, mixing well. Pour batter into 2 greased loaf pans and bake at 375 degrees for 15 minutes, then lower the temperature to 350 degrees and bake for another 45 minutes.
(For muffins, pour batter into non-stick muffin pan and bake at 375 degrees for about 18 minutes.)
Remove bread or muffins from oven and cool on wire racks. If desired, sprinkle the tops with just a little powdered sugar. Yum!
