This delicious soda bread recipe makes a great gift for St. Patrick's Day!

Ingredients:2 1/2 c. all-purpose flour
1/2 c. whole-wheat flour
1 c. dried currants
1 c. light-brown sugar
1 T. baking powder
1 tsp. baking soda
Directions:
Combine all the ingredients in a mixing bowl and store in an airtight container, or layer them in the jar as follows...
1 1/2 c. flour

remaining flours, baking powder and soda mixed together
1 c. dried currants
Attach a gift card that reads:
Irish Soda Bread
Makes 1 Loaf
1 package Irish Soda Bread Mix
1/4 c. butter or margarine, softened
2 eggs
1 1/2 c. buttermilk
Directions: Preheat oven to 350 degrees. Place the Irish Soda Bread mix into a large bowl. Cut the butter into the mix. Add eggs and buttermilk, and stir to blend. When the mixture is smooth, pour into a greased and floured 9-inch springform pan. Bake for 45 minutes, or until a toothpick inserted into the middle comes out clean. Serve warm.
