Frugal Recipes: St. Patrick's Day Green Holiday Cake

by Michelle Jones

DELICIOUS!!!

This is one of the easiest cakes we make and it's perfect for St. Patrick's Day because, well, it's green! The cake is so light and fluffy, and the frosting is amazing. One of the best cakes you'll ever put in your mouth. You can serve it cold or slightly warm. You will love it. Your kids will love it. The only trick is, remembering to make it again next year!

Ingredients:

1 package white cake mix (buy a few extra when mixes go on sale)
3/4 c. vegetable oil
1 c. lemon-lime flavored soda (store brand is fine)
3 large eggs
2 (3-ounce) packages instant pistachio pudding mix, regular or sugar-free
2 envelopes whipped topping mix (like Dream Whip)
1 and 1/2 c. milk

Directions:

Beat cake mix, oil, soda, eggs (one at a time), and first package of pudding until smooth. For about 2 minutes.

Pour batter into greased 9 x 13 inch pan. Bake at 325 degrees for 45 minutes, or until cake tests done.

Beat Dream Whip, milk, and pudding until stiff; pour over cooled cake and refrigerate.

Serve slightly warm or after chilled for an hour.

Both are DELICIOUS!!!
